Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1/3 cup vegetable oil
  • 1/2 cup buttermilk
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, mix sugar and egg until well combined. Add oil, buttermilk, lemon zest, and vanilla extract, mixing until smooth.
  4. Gently fold the wet ingredients into the dry ingredients until just combined. Fold in the blueberries gently.
  5. Divide the batter into the muffin tin and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Allow to cool slightly before serving.
