Description

Delightfully simple Lemon Blueberry Muffins that combine tart lemon and sweet blueberries for a perfect treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix together the melted butter, eggs, milk, lemon juice, and lemon zest until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the blueberries.
  6. Fill each muffin cup about two-thirds full with the batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool for a few minutes before transferring to a wire rack.

For best results, avoid overmixing the batter to prevent tough muffins. Use fresh blueberries for optimal texture.
