- 1 egg
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon brown sugar
- 1 tablespoon sesame oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 green onions, finely chopped
- ½ cup mayonnaise
- 1 tablespoon gochujang
- 1 tablespoon lime juice
- 1 teaspoon honey
- ½ teaspoon garlic powder
- Sesame seeds (for garnish)
- Chopped green onions (for garnish)
Instructions
- Gather all ingredients for meatballs and spicy mayo dip.
- In a large bowl, mix ground beef (or chicken), panko breadcrumbs, egg, minced garlic, grated ginger, soy sauce, gochujang, brown sugar, sesame oil, salt, black pepper, and chopped green onions until combined.
- Form meat mixture into 1 to 1.5-inch meatballs and place on a plate.
- Cook the meatballs by pan-frying (5-7 mins), baking (400°F for 15-20 mins), or grilling (10-12 mins).
- For the spicy mayo dip, mix together mayonnaise, gochujang, lime juice, honey, and garlic powder in a bowl.
- Serve the cooked meatballs hot, garnished, with the spicy mayo dip on the side.
Notes
For more tenderness, avoid overmixing meatball ingredients. Customize the spice level by adjusting gochujang. For a leaner option, switch to ground turkey.
