A delicious low-carb dish featuring shrimp in a creamy sauce topped with cheese and pork rinds, perfect for keto diets.
Ingredients
- 2 pounds large shrimp (peeled, deveined, tails removed)
- 2 tablespoons olive oil
- Salt and pepper (to taste)
- 4 tablespoons butter
- 1/2 cup finely chopped onion
- 4 cloves garlic (minced)
- 2 tablespoons fresh basil (chopped) or 1 tablespoon dried
- 1/8 teaspoon ground nutmeg
- 1 cup heavy whipping cream
- 1 cup grated parmesan cheese (divided)
- 1 cup shredded Monterey Jack cheese
- 1/2 cup crushed pork rind crumbs
Instructions
- Preheat your oven to 375°F (190°C) and grease a large baking dish with butter or cooking spray.
- Heat olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper, then sear for 1–2 minutes on each side until pink. Remove shrimp from skillet and set aside.
- In the same skillet, melt the butter. Add chopped onion and sauté for 3–4 minutes until soft. Add minced garlic, basil, and nutmeg, cooking for an additional 30 seconds until fragrant.
- Pour in heavy cream and let it simmer for 3–4 minutes until slightly thickened. Stir in 1/2 cup of parmesan and all of the Monterey Jack cheese until smooth. Season with salt and pepper to taste.
- Place seared shrimp into the prepared baking dish and pour the creamy sauce evenly over the shrimp.
- In a small bowl, mix the remaining 1/2 cup of parmesan with crushed pork rinds and sprinkle over the top.
- Bake in the preheated oven for about 25 minutes, or until the top is golden and the sauce is bubbling.
Notes
Ensure shrimp are not overcooked during searing as they will finish cooking in the oven. For a spicier kick, add red pepper flakes to the cream sauce.
