A simple, delicious, keto-friendly beef stroganoff made in a crockpot, perfect for lazy cooking without sacrificing flavor.
Ingredients
- 2 lbs beef stew meat
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup sour cream
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups mushrooms, sliced
- 1 tablespoon olive oil
Instructions
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic and sauté until softened.
- Transfer the sautéed mixture to the crockpot.
- Add the beef stew meat, beef broth, Worcestershire sauce, paprika, salt, and pepper to the crockpot.
- Cover and cook on low for 6 to 8 hours or until the beef is tender.
- About 30 minutes before serving, stir in the sour cream and sliced mushrooms.
- Serve hot, garnished with fresh herbs if desired.
