Ingredients
- 4 boneless pork chops
- 1 large onion, sliced very thin
- 1 medium honeycrisp apple, thin slices
- Salt, to taste
- Black pepper, to taste
- 1/2 cup apple butter
- 1/2 cup water
- 2 tbsp whole grain mustard
- 1 fresh rosemary sprig (optional)
- 3 fresh sage leaves (optional)
Instructions
- Season each pork chop with salt and black pepper on both sides.
- In a large skillet over medium heat, add a drizzle of oil. Add the seasoned pork chops and sear for about 3 to 4 minutes on each side until golden brown. Remove from skillet and set aside.
- In the same skillet, add sliced onions and cook until translucent and slightly caramelized, about 5 minutes.
- Add honeycrisp apple slices and cook for an additional 2 to 3 minutes until softened.
- Pour in apple butter and water, stir to combine, then mix in whole grain mustard.
- Return pork chops to the skillet, adding rosemary and sage if using. Cover and simmer on low heat for about 10 minutes.
- Ensure internal temperature of pork chops reaches 145°F. Allow to rest for a few minutes before serving.
- Serve pork chops drizzled with the apple butter sauce.

For extra flavor, consider marinating the pork chops in apple cider before cooking. Let the pork chops rest after cooking for juiciness.
