Description

A delicious and comforting dish featuring Italian sausage, potato gnocchi, and melted mozzarella cheese, perfect for weeknight dinners.


Ingredients

  • 1 lb Italian sausage (mild or spicy), casings removed
  • 1 package (16 oz) potato gnocchi
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 cup baby spinach leaves
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1/2 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the Italian sausage and cook, breaking it apart with a spoon until browned and cooked through, about 5–6 minutes.
  2. Add the diced onion and cook until softened, about 3 minutes. Stir in the garlic and cook until fragrant, about 1 minute.
  3. Add the gnocchi to the skillet. Cook, stirring occasionally, until the gnocchi start to turn golden, about 2–3 minutes.
  4. Pour in the diced tomatoes with their juices and sprinkle with Italian seasoning. Stir to combine and bring to a simmer.
  5. Stir in the baby spinach and cook until wilted, about 1 minute. Season with salt and black pepper to taste.
  6. Sprinkle mozzarella cheese over the top, cover, and cook until the cheese is melted, about 2–3 minutes. Serve hot.

Notes

For a bit of heat, choose spicy Italian sausage. You can also use any type of cheese you like, such as cheddar or provolone. Consider adding veggies like bell peppers or zucchini.
