Description
A delicious and comforting dish featuring Italian sausage, potato gnocchi, and melted mozzarella cheese, perfect for weeknight dinners.
Ingredients
- 1 lb Italian sausage (mild or spicy), casings removed
- 1 package (16 oz) potato gnocchi
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes, undrained
- 1 cup baby spinach leaves
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1/2 teaspoon Italian seasoning
- Salt and freshly ground black pepper, to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the Italian sausage and cook, breaking it apart with a spoon until browned and cooked through, about 5–6 minutes.
- Add the diced onion and cook until softened, about 3 minutes. Stir in the garlic and cook until fragrant, about 1 minute.
- Add the gnocchi to the skillet. Cook, stirring occasionally, until the gnocchi start to turn golden, about 2–3 minutes.
- Pour in the diced tomatoes with their juices and sprinkle with Italian seasoning. Stir to combine and bring to a simmer.
- Stir in the baby spinach and cook until wilted, about 1 minute. Season with salt and black pepper to taste.
- Sprinkle mozzarella cheese over the top, cover, and cook until the cheese is melted, about 2–3 minutes. Serve hot.
Notes
For a bit of heat, choose spicy Italian sausage. You can also use any type of cheese you like, such as cheddar or provolone. Consider adding veggies like bell peppers or zucchini.
