Description
A comforting and creamy beef stroganoff that’s easy to make and perfect for cozy dinners.
Ingredients
- 1 lb beef sirloin, thinly sliced (or chicken/tofu)
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 cup beef broth (or vegetable broth)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 cup sour cream (or Greek yogurt)
- Salt and pepper, to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
- Egg noodles or rice, for serving
Instructions
- Heat olive oil in a large skillet over medium heat. Add the sliced beef and cook until browned, about 4-5 minutes.
- Add chopped onion and minced garlic. Cook until onion is soft and translucent, about 2-3 minutes.
- Add sliced mushrooms and cook until golden and juicy, about 5 minutes.
- Pour in beef broth, Worcestershire sauce, and Dijon mustard. Stir and bring to a low boil.
- Reduce heat to low and stir in sour cream until combined and creamy. Adjust seasoning with salt and pepper.
- Cook egg noodles or rice according to package instructions and serve the sauce over it. Garnish with parsley, if desired.
Notes
Feel free to swap out beef for chicken or tofu. Make it vegetarian with lentils or mushrooms.
