Description

A quick and delicious grilled cheese burrito filled with ground beef, cheese, and rice, wrapped in a warm tortilla.


Ingredients

  • 1 pound Ground Beef (or substitute with turkey or plant-based)
  • 1 packet Taco Seasoning
  • 2 cups Cooked White Rice (or brown rice/quinoa)
  • 1 cup Sour Cream (or yogurt/dairy-free alternative)
  • 1 cup Nacho Cheese Sauce (or homemade/vegan cheese)
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Shredded Mozzarella Cheese
  • 1 tablespoon Chipotle Sauce
  • 4 large Flour Tortillas (or whole wheat/gluten-free)
  • 2 tablespoons Butter or Oil (or olive oil/non-stick spray)


Instructions

  1. Cook the Ground Beef: Heat a skillet over medium-high heat, add ground beef, and taco seasoning. Sauté until cooked through, then drain excess grease.
  2. Mix the Rice: In a bowl, combine cooked rice with beef and stir. Add sour cream for a creamy filling.
  3. Add Cheese and Sauce: Pour in nacho cheese sauce and chipotle sauce, and mix well.
  4. Build the Burrito: Lay tortilla flat, spoon the beef mixture in the center, and sprinkle with cheddar and mozzarella.
  5. Roll It Up: Fold the sides and roll from the bottom to create a tight burrito.
  6. Grill Like a Pro: Heat butter or oil in the skillet. Grill burrito seam-side down for 2-3 minutes, then flip and grill the other side.
  7. Slice and Serve: Remove from skillet, let it cool slightly, slice, and enjoy!
