Deliciously fluffy blueberry muffins topped with a crunchy streusel, perfect for breakfast or a snack.
Ingredients
- 1 cup fresh blueberries (or frozen)
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup milk
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup brown sugar
- 1/2 cup oatmeal
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a mixing bowl, whisk together flour, granulated sugar, baking powder, and salt.
- In another bowl, mix melted butter, eggs, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined, then fold in blueberries gently.
- For the streusel, combine brown sugar, oatmeal, flour, and cinnamon in a small bowl and mix. Sprinkle on top of muffin batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
