Description

Deliciously fluffy blueberry muffins topped with a crunchy streusel, perfect for breakfast or a snack.


Ingredients

  • 1 cup fresh blueberries (or frozen)
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1/2 cup oatmeal
  • 1 teaspoon cinnamon


Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. In another bowl, mix melted butter, eggs, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined, then fold in blueberries gently.
  5. For the streusel, combine brown sugar, oatmeal, flour, and cinnamon in a small bowl and mix. Sprinkle on top of muffin batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
