Description

Healthy and delicious blueberry oatmeal muffins that are quick and easy to make, perfect for breakfast.


Ingredients

  • 1 cup rolled oats
  • 1 cup milk
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen blueberries


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with muffin liners.
  2. In a bowl, mix together rolled oats and milk and let them sit for about 10 minutes.
  3. Add applesauce, honey (or maple syrup), and vanilla extract to the oat mixture and stir until well combined.
  4. In another bowl, combine all-purpose flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Gently fold in the blueberries.
  7. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  8. Bake for about 18-22 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow them to cool before serving.
