Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup cream cheese, softened
  • 1/4 cup butter, softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup blueberries
  • 1/4 cup milk


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk until well combined.
  3. In another bowl, beat the cream cheese and butter until smooth.
  4. Add the egg and vanilla extract to the cream cheese mixture and mix well.
  5. Gradually add the dry ingredients to the cream cheese mixture, alternating with milk. Mix until just combined.
  6. Gently fold in the blueberries.
  7. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Allow to cool slightly before serving.

Notes

Be sure not to overmix the batter to avoid tough muffins. Use paper liners for easy cleanup.
