A quick and satisfying Instant Pot recipe featuring succulent chicken breasts in a creamy garlic Parmesan sauce, perfect for busy weeknights and family gatherings.
Ingredients
- 1.5 to 2 pounds boneless, skinless chicken breasts
- Salt and black pepper to taste
- 1 tablespoon Italian seasoning
- 1 pinch red pepper flakes (optional)
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 8-10 minced garlic cloves
- 1 cup low-sodium chicken broth
- 4 ounces cream cheese (optional)
- 1/2 cup heavy cream
- 3/4 cup freshly grated Parmesan cheese
- 1 tablespoon cornstarch (optional)
- Chopped fresh parsley for garnish
Instructions
- Prepare the chicken by patting it dry and seasoning with salt, pepper, and Italian seasoning.
- Turn on the Instant Pot and select the ‘Sauté’ function. Add olive oil and butter, then sear the chicken for 2-3 minutes on each side.
- Add minced garlic to the pot and sauté for 30-60 seconds until fragrant.
- Pour in the chicken broth and deglaze the pot by scraping up the browned bits.
- Return seared chicken to the pot and secure the lid. Select ‘Pressure Cook’ for 10-12 minutes depending on chicken thickness.
- Once cooking is complete, allow pressure to release naturally for 10 minutes, then vent to release any remaining pressure.
- Remove chicken and check for doneness. Select ‘Sauté’ again and whisk in cream cheese and heavy cream to make the sauce.
- Stir in Parmesan cheese until melted, adjust thickness with cornstarch if desired.
- Combine chicken with the sauce and garnish with parsley before serving.
Notes
For a richer flavor, consider roasting the garlic before adding it to the sauce.
