Description

A quick and satisfying Instant Pot recipe featuring succulent chicken breasts in a creamy garlic Parmesan sauce, perfect for busy weeknights and family gatherings.


Ingredients

  • 1.5 to 2 pounds boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 1 tablespoon Italian seasoning
  • 1 pinch red pepper flakes (optional)
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 8-10 minced garlic cloves
  • 1 cup low-sodium chicken broth
  • 4 ounces cream cheese (optional)
  • 1/2 cup heavy cream
  • 3/4 cup freshly grated Parmesan cheese
  • 1 tablespoon cornstarch (optional)
  • Chopped fresh parsley for garnish


Instructions

  1. Prepare the chicken by patting it dry and seasoning with salt, pepper, and Italian seasoning.
  2. Turn on the Instant Pot and select the ‘Sauté’ function. Add olive oil and butter, then sear the chicken for 2-3 minutes on each side.
  3. Add minced garlic to the pot and sauté for 30-60 seconds until fragrant.
  4. Pour in the chicken broth and deglaze the pot by scraping up the browned bits.
  5. Return seared chicken to the pot and secure the lid. Select ‘Pressure Cook’ for 10-12 minutes depending on chicken thickness.
  6. Once cooking is complete, allow pressure to release naturally for 10 minutes, then vent to release any remaining pressure.
  7. Remove chicken and check for doneness. Select ‘Sauté’ again and whisk in cream cheese and heavy cream to make the sauce.
  8. Stir in Parmesan cheese until melted, adjust thickness with cornstarch if desired.
  9. Combine chicken with the sauce and garnish with parsley before serving.

Notes

For a richer flavor, consider roasting the garlic before adding it to the sauce.
