A hearty Indian Beef Curry that brings together rich spices and tender cuts of beef to create a warm, flavorful dish perfect for sharing.

Ingredients

  • 2 lbs beef, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 2 green chili peppers, sliced (adjust to taste)
  • 1 can (14 oz) diced tomatoes
  • 1 cup coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add chopped onions and cook until soft and translucent (5-7 minutes).
  2. Stir in minced garlic and grated ginger, cooking for 1 minute until fragrant.
  3. Add sliced green chili peppers and cook for 2 minutes.
  4. Mix in diced tomatoes, cooking for 5 minutes until they break down.
  5. Add beef pieces, stirring to coat with the onion-tomato mixture.
  6. Sprinkle in curry powder, garam masala, turmeric, cumin, and salt, stirring well.
  7. Pour in coconut milk and bring to a gentle boil.
  8. Reduce heat, cover, and let simmer for 90-120 minutes or until beef is tender, stirring occasionally.
  9. Serve hot, garnished with fresh cilantro.

Notes

Use marbled cuts of beef for tenderness. Adjust the spices according to taste.
