A hearty Indian Beef Curry that brings together rich spices and tender cuts of beef to create a warm, flavorful dish perfect for sharing.
Ingredients
- 2 lbs beef, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 1 tablespoon ginger, grated
- 2 green chili peppers, sliced (adjust to taste)
- 1 can (14 oz) diced tomatoes
- 1 cup coconut milk
- 2 tablespoons curry powder
- 1 tablespoon garam masala
- 1 teaspoon turmeric
- 1 teaspoon cumin
- Salt, to taste
- Fresh cilantro, for garnish
Instructions
- Heat vegetable oil in a large pot over medium heat. Add chopped onions and cook until soft and translucent (5-7 minutes).
- Stir in minced garlic and grated ginger, cooking for 1 minute until fragrant.
- Add sliced green chili peppers and cook for 2 minutes.
- Mix in diced tomatoes, cooking for 5 minutes until they break down.
- Add beef pieces, stirring to coat with the onion-tomato mixture.
- Sprinkle in curry powder, garam masala, turmeric, cumin, and salt, stirring well.
- Pour in coconut milk and bring to a gentle boil.
- Reduce heat, cover, and let simmer for 90-120 minutes or until beef is tender, stirring occasionally.
- Serve hot, garnished with fresh cilantro.
Notes
Use marbled cuts of beef for tenderness. Adjust the spices according to taste.
