Ingredients
- 1 pound beef tenderloin, sliced
- 1 onion, chopped
- 8 ounces mushrooms, sliced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 cup sour cream
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Cooked egg noodles or rice for serving
Instructions
- Heat olive oil and butter in a large skillet over medium heat. Add the sliced beef and cook until browned. Remove and set aside.
- In the same skillet, add the onions and mushrooms; sauté until soft.
- Add garlic and cook for an additional minute.
- Pour in the beef broth and bring to a simmer. Stir in the Dijon mustard and sour cream.
- Return the beef to the skillet, mix well, and heat through. Season with salt and pepper.
- Serve over cooked egg noodles or rice.
