Description

A quick and delicious one-pan meal featuring juicy chicken thighs, rice, and a sweet sticky honey BBQ sauce that requires minimal effort.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish
  • 1 tbsp soy sauce (optional)
  • 2 cloves garlic, minced (optional)


Instructions

  1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear chicken for 3 to 4 minutes per side until golden brown.
  3. Remove chicken and set aside.
  4. In a bowl, mix BBQ sauce, honey, soy sauce, and minced garlic until well combined.
  5. In the same pan, toast the uncooked rice for 1 to 2 minutes, stirring to avoid scorching.
  6. Add chicken broth and half of the sauce. Stir to combine and scrape any browned bits from the pan.
  7. Return the chicken to the pan and pour the remaining sauce over the top.
  8. Cover and simmer on low heat for 15 minutes.
  9. Add mixed vegetables, cover, and cook for an additional 5 minutes or until rice is tender and chicken is cooked through.
  10. Let sit for 5 minutes before serving for optimal flavor and moisture.
  11. Garnish with green onions and serve hot.

Notes

For added flavor, do not forget to taste the sauce before using it. Adjust salt and sweetness as needed. You can also use frozen mixed vegetables for convenience.
