Ingredients

  • 2 cups of broth (chicken or vegetable)
  • 1 cup of chopped carrots
  • 1 cup of chopped celery
  • 1 cup of chopped onion
  • 2 cloves of garlic, minced
  • 1 can of diced tomatoes
  • 1 cup of pasta (optional)
  • Salt and pepper to taste
  • Herbs (thyme, bay leaves, or parsley) to taste


Instructions

  1. In a slow cooker, combine broth, carrots, celery, onion, garlic, and tomatoes. Set it and forget it for now.
  2. If using, add the pasta.
  3. Season with salt, pepper, and herbs, and taste-test.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the veggies are tender.
