An easy and delicious homemade soup recipe that anyone can make, perfect for a cozy meal.
Ingredients
- 2 cups of broth (chicken or vegetable)
- 1 cup of chopped carrots
- 1 cup of chopped celery
- 1 cup of chopped onion
- 2 cloves of garlic, minced
- 1 can of diced tomatoes
- 1 cup of pasta (optional)
- Salt and pepper to taste
- Herbs (thyme, bay leaves, or parsley) to taste
Instructions
- In a slow cooker, combine broth, carrots, celery, onion, garlic, and tomatoes. Set it and forget it for now.
- If using, add the pasta.
- Season with salt, pepper, and herbs, and taste-test.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the veggies are tender.
- Stir well and serve warm.
Notes
Serve with fresh bread for dipping. Soup flavors improve with age, perfect for leftovers.
