A delicious fusion of pizza and Mexican flavors, featuring layers of seasoned beef, creamy beans, and melting cheese. Perfect for gatherings and family nights.
Ingredients
- 1 pound lean ground beef
- 1 packet (1 ounce) taco seasoning
- 1/2 cup water
- 6 medium flour tortillas
- 1 can (16 ounces) refried beans
- 1 can (10 ounces) red enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper-jack cheese
- 1 Roma tomato, diced
- 1 green onion, diced
- 1 small can sliced black olives
Instructions
- Preheat your oven to 375°F (190°C). Spray two baking sheets with non-stick spray.
- Lay three tortillas on each baking sheet and bake for 3-5 minutes, then flip and bake for another 2-5 minutes until golden and crispy.
- In a large skillet, cook and crumble the ground beef over medium-high heat until fully browned. Drain excess grease.
- Stir in taco seasoning and 1/2 cup of water, bring to a boil, then reduce heat and simmer for about 10 minutes.
- Warm the refried beans in a microwave-safe bowl for about one minute.
- Spread refried beans on a crispy tortilla, layer with seasoned beef, and top with another tortilla.
- Spread enchilada sauce on top, sprinkle with cheeses, and add diced tomatoes, green onions, and olives.
- Bake the assembled pizzas for about 5 minutes until cheese is melted and bubbly. Let cool slightly before slicing and serving.
Notes
Store leftover pizza in an airtight container in the refrigerator for up to 4 days. Can be frozen for up to 2 months.
