Description

A delicious fusion of pizza and Mexican flavors, featuring layers of seasoned beef, creamy beans, and melting cheese. Perfect for gatherings and family nights.


Ingredients

  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning
  • 1/2 cup water
  • 6 medium flour tortillas
  • 1 can (16 ounces) refried beans
  • 1 can (10 ounces) red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato, diced
  • 1 green onion, diced
  • 1 small can sliced black olives


Instructions

  1. Preheat your oven to 375°F (190°C). Spray two baking sheets with non-stick spray.
  2. Lay three tortillas on each baking sheet and bake for 3-5 minutes, then flip and bake for another 2-5 minutes until golden and crispy.
  3. In a large skillet, cook and crumble the ground beef over medium-high heat until fully browned. Drain excess grease.
  4. Stir in taco seasoning and 1/2 cup of water, bring to a boil, then reduce heat and simmer for about 10 minutes.
  5. Warm the refried beans in a microwave-safe bowl for about one minute.
  6. Spread refried beans on a crispy tortilla, layer with seasoned beef, and top with another tortilla.
  7. Spread enchilada sauce on top, sprinkle with cheeses, and add diced tomatoes, green onions, and olives.
  8. Bake the assembled pizzas for about 5 minutes until cheese is melted and bubbly. Let cool slightly before slicing and serving.

Notes

Store leftover pizza in an airtight container in the refrigerator for up to 4 days. Can be frozen for up to 2 months.
