Description

A cozy, simple, and forgiving potato soup that is perfect for dinner when you want comfort without the fuss.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup milk
  • Salt and pepper to taste
  • 2 tablespoons butter
  • Chopped chives or green onions for garnish


Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  2. Add the diced potatoes and stir to combine. Pour in the broth and bring to a boil. Reduce heat and let simmer until the potatoes are tender, about 15-20 minutes.
  3. Once the potatoes are cooked, use a potato masher or immersion blender to blend the soup to your desired consistency.
  4. Stir in the milk and season with salt and pepper.
  5. Serve warm, garnished with chives or green onions.

Notes

For a creamier soup, use half and half or cream. For a lighter version, use vegetable broth and skip some butter.
