A delicious and comforting dish featuring tender chicken, crispy potatoes, and a creamy garlic parmesan sauce, all while being high in protein and low in calories.
Ingredients
- 800g chicken breast, cubed
- 3-4 garlic cloves, minced
- 2 tsp onion powder
- 2 tsp mixed herbs
- 1 tsp chili flakes
- 2 tsp paprika
- 1 tsp salt
- 2 tsp olive oil
- 800g uncooked potatoes, cubed
- 1 tsp salt

- 120ml milk (any type)
- 100g light cream cheese
- 40g grated Parmesan
- 50g shredded mozzarella (or any low-fat cheese)
- Fresh parsley for garnish
Instructions
- Air fry or bake the cubed potatoes until golden and crispy.
- In a skillet, sauté the seasoned chicken cubes over medium heat for about 5-6 minutes until fully cooked.
- Lower the heat and add the milk and cream cheese to the chicken, stirring until smooth.
- Incorporate the crispy potatoes into the chicken mixture and sprinkle mozzarella on top. Cover the skillet for 4-5 minutes to melt the cheese.
- Garnish with fresh parsley and serve hot.
Notes
Best served on a plate with a fresh green salad. Can be stored in an airtight container in the refrigerator for 3-4 days.
