Description
A quick and easy creamy beef pasta that’s protein-packed and perfect for weeknight dinners.
Ingredients
- 1 pound lean ground beef
- 8 ounces pasta (penne or fusilli)
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes with juices
- 1 cup low-sodium beef broth
- 1 tablespoon Italian seasoning
- ½ cup plain Greek yogurt
- ¼ cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh basil or parsley, for garnish
Instructions
- Cook the pasta according to package directions in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
- In a large skillet, heat olive oil over medium-high heat. Add ground beef and cook until browned, about 5-7 minutes. Season with salt and pepper.
- Add diced onion and minced garlic to the skillet; sauté until onion is translucent, about 2-3 minutes.
- Stir in diced tomatoes, beef broth, and Italian seasoning. Simmer for 10 minutes.
- Lower heat and mix in Greek yogurt and Parmesan cheese. Adjust consistency with reserved pasta water as needed.
- Toss the drained pasta with the sauce until evenly coated. Season with additional salt and pepper if necessary.
- Garnish with fresh herbs and serve hot.
