Description

A quick and easy creamy beef pasta that’s protein-packed and perfect for weeknight dinners.


Ingredients

  • 1 pound lean ground beef
  • 8 ounces pasta (penne or fusilli)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes with juices
  • 1 cup low-sodium beef broth
  • 1 tablespoon Italian seasoning
  • ½ cup plain Greek yogurt
  • ¼ cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish


Instructions

  1. Cook the pasta according to package directions in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
  2. In a large skillet, heat olive oil over medium-high heat. Add ground beef and cook until browned, about 5-7 minutes. Season with salt and pepper.
  3. Add diced onion and minced garlic to the skillet; sauté until onion is translucent, about 2-3 minutes.
  4. Stir in diced tomatoes, beef broth, and Italian seasoning. Simmer for 10 minutes.
  5. Lower heat and mix in Greek yogurt and Parmesan cheese. Adjust consistency with reserved pasta water as needed.
  6. Toss the drained pasta with the sauce until evenly coated. Season with additional salt and pepper if necessary.
  7. Garnish with fresh herbs and serve hot.
