Ingredients
- 1 cup chicken or vegetable broth
- 1 cup cream or whole milk
- 1 cup mixed vegetables (carrots, celery, peas)
- 1 cup cooked chicken or a protein of choice
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon dried thyme (optional)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion and minced garlic; sauté until onion is translucent.
- Stir in mixed vegetables and cook for a few minutes.
- Pour in the broth and bring it to a simmer.
- Add cooked chicken or protein of choice, then stir in cream or milk.
