Deliciously fluffy blueberry muffins that are high in protein and perfect for satisfying your cravings.
Ingredients
- 1 cup whole wheat flour
- 1/2 cup protein powder
- 1/2 cup sugar
- 1/4 cup coconut oil (melted)
- 1 cup milk (dairy or non-dairy)
- 1 large egg (or flax egg)
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1 cup fresh blueberries
- A pinch of salt
Instructions
- Preheat your oven to 375°F (190°C).
- Line a muffin tin with paper liners or grease it.
- In a large mixing bowl, combine the whole wheat flour, protein powder, sugar, baking powder, and salt. Stir well.
- In another bowl, whisk together the melted coconut oil, milk, egg, and vanilla extract.
- Slowly add the wet ingredients to the dry ingredients and mix gently.
- Fold in the blueberries carefully.
- Scoop the batter into the muffin tin, filling each cup about three-quarters full.
- Bake for 20-25 minutes, or until golden brown and a toothpick comes out clean.
- Let the muffins cool for a few minutes in the tin before transferring to a wire rack.
