A warm, hearty comfort food that’s easy to prepare in a slow cooker, featuring tender beef and rich gravy served over mashed potatoes.
Ingredients
- 2 lbs beef chuck roast, trimmed
- 1 large onion, sliced
- 2 cups beef broth
- 1 packet brown gravy mix (about 1 oz)
- 1 tablespoon Worcestershire sauce
- 3 cups mashed potatoes, prepared
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- 2 tablespoons cornstarch (optional)
Instructions
- Brown the beef: Sear beef chuck roast in a skillet over medium-high heat until browned on all sides.
- Sauté the onion: Sauté sliced onion in the same skillet until soft and translucent.
- Combine it all: In a slow cooker, combine the seared beef, sautéed onion, beef broth, gravy mix, Worcestershire sauce, garlic powder, salt, and pepper. Stir well.
- Slow cook it: Cover and cook on low for 6-8 hours or high for 4-5 hours until beef is tender.
- Thickening time: If desired, mix cornstarch with cold water and stir it into the slow cooker during the last hour of cooking.
- Serve: Spoon the beef and gravy over prepared mashed potatoes and enjoy.
Notes
Browning the beef adds flavor; make sure to season well.
