Description

Ingredients

  • 2 lbs beef chuck roast, trimmed
  • 1 large onion, sliced
  • 2 cups beef broth
  • 1 packet brown gravy mix (about 1 oz)
  • 1 tablespoon Worcestershire sauce
  • 3 cups mashed potatoes, prepared
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons cornstarch (optional)


Instructions

  1. Brown the beef: Sear beef chuck roast in a skillet over medium-high heat until browned on all sides.
  2. Sauté the onion: Sauté sliced onion in the same skillet until soft and translucent.
  3. Combine it all: In a slow cooker, combine the seared beef, sautéed onion, beef broth, gravy mix, Worcestershire sauce, garlic powder, salt, and pepper. Stir well.
  4. Slow cook it: Cover and cook on low for 6-8 hours or high for 4-5 hours until beef is tender.
  5. Thickening time: If desired, mix cornstarch with cold water and stir it into the slow cooker during the last hour of cooking.
  6. Serve: Spoon the beef and gravy over prepared mashed potatoes and enjoy.
