Description

Delicious and healthy blueberry oatmeal muffins that are quick to prepare and perfect for breakfast or a snack.


Ingredients

  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup almond milk
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup blueberries


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the rolled oats, whole wheat flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the almond milk, honey (or maple syrup), applesauce, and eggs until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  6. Divide the batter evenly among the muffin tin.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
