Ingredients
- 1 cup rolled oats
- 1 cup whole wheat flour
- 1/2 cup almond milk
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened applesauce
- 2 eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup blueberries
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the rolled oats, whole wheat flour, baking powder, baking soda, and salt.
- In another bowl, whisk together the almond milk, honey (or maple syrup), applesauce, and eggs until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the blueberries.
- Divide the batter evenly among the muffin tin.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.
