Ingredients
- 2 cups rolled oats
- 1 cup blueberries
- 1/2 cup honey or maple syrup
- 1/2 cup almond butter or peanut butter
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup nuts or seeds (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- In a large bowl, combine rolled oats, baking powder, and salt.
- In another bowl, mix honey (or maple syrup), nut butter, and vanilla extract until smooth.
- Add the wet mixture to the dry ingredients and stir until combined. Fold in the blueberries and optional nuts or seeds.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 25-30 minutes or until the edges are golden brown.
- Allow to cool before cutting into bars.
