Description

A guilt-free, healthier version of traditional churros that are easy to make and delicious.


Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup sweetener (coconut sugar or erythritol)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened applesauce
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Cooking spray


Instructions

  1. In a bowl, combine the almond flour, coconut flour, sweetener, baking powder, cinnamon, and salt. Mix thoroughly.
  2. In another bowl, whisk together the applesauce, eggs, and vanilla extract until well blended.
  3. Pour the wet mixture into the bowl of dry ingredients. Mix until fully combined; the mixture should be sticky.
  4. Preheat your air fryer to 350°F (175°C).
  5. Roll small scoops of dough into bite-sized balls, about one inch in diameter.
  6. Lightly spray the air fryer basket with cooking spray. Place churro bites in the basket, spaced apart.
  7. Air fry for about 8-10 minutes or until golden brown, shaking the basket halfway through.
  8. Remove churro bites from the air fryer and allow to cool slightly before serving.

Notes

Serve warm for the best texture and flavor. Store in an airtight container for up to three days at room temperature or refrigerate for up to a week.
