A quick and easy Ground Turkey Zucchini Casserole, packed with flavor and healthy ingredients. Perfect for busy weeknights!
Ingredients
- 1 lb ground turkey
- 2 medium zucchinis, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tbsp olive oil
- 1 tsp dried Italian herbs
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9×13 inch baking dish with olive oil.
- In a large skillet over medium heat, heat the olive oil. Add the diced onion and minced garlic; sauté for 2-3 minutes until fragrant.
- Add the ground turkey to the skillet. Cook until browned, breaking it apart as it cooks. Season with Italian herbs, salt, and pepper.
- Stir in the marinara sauce, then simmer for 3-5 minutes. Remove from heat.
- Arrange half of the sliced zucchini in the prepared baking dish. Spoon half of the turkey mixture over the zucchini and sprinkle with half of the mozzarella and Parmesan cheese. Repeat the layers.
- Cover with foil and bake for 25 minutes. Remove the foil and bake an additional 10 minutes, or until the cheese is bubbly and golden. Let it cool slightly before serving.
Notes
Feel free to adjust the seasoning to your taste, and add extra vegetables for more flavor. Store leftovers in the refrigerator for 3-4 days or freeze for up to 3 months.
