A wholesome twist on the classic shepherd’s pie, featuring ground turkey, nutritious vegetables, and a creamy mashed potato topping.
Ingredients
- 1 lb ground turkey
- 1 chopped onion
- 2 diced carrots
- 2 minced cloves of garlic
- 2 cups frozen peas
- 2 cups frozen corn
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- Salt and pepper to taste
- 4 cups mashed potatoes
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet over medium heat, cook ground turkey until browned, about 7-8 minutes.
- Add onion, carrots, and garlic; sauté until tender, about 5-7 minutes.
- Stir in peas, corn, Worcestershire sauce, thyme, salt, and pepper; cook for an additional 3-4 minutes.
- Spread the turkey and vegetable mixture in a baking dish.
- Top with mashed potatoes, ensuring an even layer.
- If desired, sprinkle shredded cheese over the potatoes.
- Bake for 25-30 minutes, until the top is golden brown.
- Allow to cool for a few minutes before serving.
Notes
For a creamier mashed potato topping, consider adding a splash of cream or butter.
