Description

A wholesome twist on the classic shepherd’s pie, featuring ground turkey, nutritious vegetables, and a creamy mashed potato topping.

Ingredients

  • 1 lb ground turkey
  • 1 chopped onion
  • 2 diced carrots
  • 2 minced cloves of garlic
  • 2 cups frozen peas
  • 2 cups frozen corn
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 4 cups mashed potatoes
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet over medium heat, cook ground turkey until browned, about 7-8 minutes.
  3. Add onion, carrots, and garlic; sauté until tender, about 5-7 minutes.
  4. Stir in peas, corn, Worcestershire sauce, thyme, salt, and pepper; cook for an additional 3-4 minutes.
  5. Spread the turkey and vegetable mixture in a baking dish.
  6. Top with mashed potatoes, ensuring an even layer.
  7. If desired, sprinkle shredded cheese over the potatoes.
  8. Bake for 25-30 minutes, until the top is golden brown.
  9. Allow to cool for a few minutes before serving.

Notes

For a creamier mashed potato topping, consider adding a splash of cream or butter.
