Description
A rich and creamy Ground Beef Stroganoff that’s easy to prepare and perfect for a comforting meal.
Ingredients
- 1 lb lean ground beef
- 1 medium yellow onion, finely chopped
- 8 oz button mushrooms, sliced
- 3 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1 cup sour cream
- 8 oz egg noodles
- 1 tbsp all-purpose flour
- 1 tsp sweet paprika or smoked paprika
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot. Cook the egg noodles until al dente according to package instructions, then drain and set aside.
- In a large skillet over medium heat, melt some butter. Toss in the chopped onions and minced garlic; cook until they turn golden brown. Add the sliced mushrooms and sauté until they soften.
- Crank up the heat to medium-high and add the ground beef to the skillet. Cook until it’s nicely browned, breaking it apart with a spatula.
- Sprinkle the flour over the beef mixture; stir well to coat everything. Gradually pour in the beef broth while stirring continuously until it’s smooth. Add the paprika and let it simmer for about five minutes.
- Reduce the heat and mix in the sour cream until fully incorporated. Warm it through without boiling.
- Stir in the cooked egg noodles until they are beautifully coated in that luscious sauce. Adjust the seasoning if needed.
Notes
Make sure to taste as you go and season liberally. You can also substitute Greek yogurt for sour cream if desired.
