Description

A delicious and satisfying bowl that combines sweet, savory, and spicy flavors with minimal effort.


Ingredients

  • 1 lb lean ground beef (93% preferred)
  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced
  • 1 cup cottage cheese
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • 1 taco seasoning packet
  • 2 tbsp hot honey
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F.
  2. Toss the sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread on a baking sheet.
  3. Roast the potatoes for 40 to 45 minutes until caramelized.
  4. Heat olive oil in a skillet over medium heat and sauté the diced onion for about 5 minutes.
  5. Add the ground beef and taco seasoning to the skillet and cook until browned.
  6. Assemble the bowls by layering roasted sweet potatoes, seasoned beef, avocado, and cottage cheese.
  7. Drizzle hot honey over each bowl before serving.
