A delicious and satisfying bowl that combines sweet, savory, and spicy flavors with minimal effort.
Ingredients
- 1 lb lean ground beef (93% preferred)
- 2 medium sweet potatoes, peeled and diced
- 1 avocado, sliced
- 1 cup cottage cheese
- 1 yellow onion, diced
- 2 tbsp olive oil
- 1 taco seasoning packet
- 2 tbsp hot honey
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp cinnamon
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F.
- Toss the sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread on a baking sheet.
- Roast the potatoes for 40 to 45 minutes until caramelized.
- Heat olive oil in a skillet over medium heat and sauté the diced onion for about 5 minutes.
- Add the ground beef and taco seasoning to the skillet and cook until browned.
- Assemble the bowls by layering roasted sweet potatoes, seasoned beef, avocado, and cottage cheese.
- Drizzle hot honey over each bowl before serving.
