Ingredients

  • 1 pound lean ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced

  2. In a large skillet, heat oil over medium heat. Add ground beef and diced onions; cook until browned, about 5 to 7 minutes.
  3. Add minced garlic, cumin, and chili powder to the skillet; sauté for 1 minute until fragrant.
  4. Spoon the beef mixture onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  5. Pour enchilada sauce over the rolled tortillas.
  6. Sprinkle shredded cheese on top.
  7. Bake uncovered for 20 to 25 minutes until cheese is bubbly and golden brown.
  8. Let cool for a few minutes before serving. Top with sour cream and desired toppings.

Notes

For best results, use lean beef and adjust spices to personal preference. Can be customized with various toppings.
