Ingredients
- 1 pound lean ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 8 flour or corn tortillas
- 1 cup enchilada sauce
- 1 cup shredded cheddar or Monterey Jack cheese
- Oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat oil over medium heat. Add ground beef and diced onions; cook until browned, about 5 to 7 minutes.
- Add minced garlic, cumin, and chili powder to the skillet; sauté for 1 minute until fragrant.
- Spoon the beef mixture onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
- Pour enchilada sauce over the rolled tortillas.
- Sprinkle shredded cheese on top.
- Bake uncovered for 20 to 25 minutes until cheese is bubbly and golden brown.
- Let cool for a few minutes before serving. Top with sour cream and desired toppings.
