Description

Comforting rolled tortillas filled with savory ground beef, smothered in rich sauce and melted cheese. A family favorite sure to bring joy to any table.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (8 oz) tomato paste
  • 1 cup water
  • 2 tsp chili powder
  • 1 tsp cumin
  • 8 flour or corn tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste


Instructions

  1. Prepare the Filling: Heat a skillet over medium heat. Add ground beef, onion, and garlic. Cook until browned and drain excess fat.
  2. Add Flavor: Stir in tomato sauce, tomato paste, water, chili powder, cumin, and season with salt and pepper. Simmer for 10 minutes.
  3. Preheat: Preheat oven to 350°F (175°C).
  4. Assemble the Enchiladas: Fill tortillas with beef mixture, roll them neatly, and place seam-side down in a baking dish.
  5. Top it Off: Pour remaining sauce over enchiladas and sprinkle shredded cheese on top.
