Description

A healthy and delicious meal featuring grilled chicken, crisp broccoli, and creamy garlic sauce over rice.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 2 cups cooked white or brown rice
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley


Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the chicken breasts with 1 tablespoon of olive oil. Season them with garlic powder, paprika, salt, and pepper.
  3. Grill the chicken for 6-8 minutes on each side or until fully cooked, ensuring the juices run clear. Allow the chicken to rest before slicing.
  4. Toss the broccoli florets with the remaining olive oil, salt, and pepper. Grill them for about 5-6 minutes until tender and lightly charred.
  5. In a small bowl, whisk together the Greek yogurt, mayonnaise, minced garlic, lemon juice, and chopped parsley to create the creamy garlic sauce.
  6. To assemble the bowls, divide the cooked rice among four bowls. Top each with sliced grilled chicken and broccoli. Drizzle generously with the creamy garlic sauce.
  7. Serve immediately and garnish with extra parsley if desired.

Notes

Best served warm. Can be garnished with fresh lemon wedges for added flavor.
