A healthy and delicious meal featuring grilled chicken, crisp broccoli, and creamy garlic sauce over rice.
Ingredients
- 2 boneless, skinless chicken breasts
- 2 cups broccoli florets
- 2 cups cooked white or brown rice
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup plain Greek yogurt
- 2 cloves garlic, minced
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat the grill to medium-high heat.
- Brush the chicken breasts with 1 tablespoon of olive oil. Season them with garlic powder, paprika, salt, and pepper.
- Grill the chicken for 6-8 minutes on each side or until fully cooked, ensuring the juices run clear. Allow the chicken to rest before slicing.
- Toss the broccoli florets with the remaining olive oil, salt, and pepper. Grill them for about 5-6 minutes until tender and lightly charred.
- In a small bowl, whisk together the Greek yogurt, mayonnaise, minced garlic, lemon juice, and chopped parsley to create the creamy garlic sauce.
- To assemble the bowls, divide the cooked rice among four bowls. Top each with sliced grilled chicken and broccoli. Drizzle generously with the creamy garlic sauce.
- Serve immediately and garnish with extra parsley if desired.
Notes
Best served warm. Can be garnished with fresh lemon wedges for added flavor.
