Description

A glorious combination of cheesy goodness and burrito bliss that takes only a few steps to whip up.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella
  • 4 large flour tortillas
  • Butter or oil for grilling


Instructions

  1. Brown the ground beef in a skillet over medium heat for 8–10 minutes. Drain excess grease. Add taco seasoning and 1/4 cup of water and let it simmer for 5 minutes.
  2. Heat tortillas in a dry skillet or microwave for 10-15 seconds until flexible.
  3. Lay a tortilla flat and layer with cooked rice, seasoned beef, nacho cheese, chipotle sauce, sour cream, and top with cheddar and mozzarella.
  4. Heat a clean skillet and sprinkle 2 tablespoons of shredded cheese on the bottom. Place the burrito seam-side down and cook until golden brown, about 3–4 minutes per side.

Notes

Customize by swapping ground beef for turkey or tofu and trying different cheeses or sauces.
