Description

A quick and easy blueberry cake that is fluffy, sweet, and perfect for any occasion.


Ingredients

  • 2 cups fresh blueberries
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch pan.
  2. In a large bowl, cream the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In another bowl, combine the flour, baking powder, and salt. Gradually add it to the creamed mixture alternately with milk. Mix just until combined.
  5. Fold in the blueberries gently.
  6. Pour the batter into the prepared pan.
  7. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before serving.

Notes

Feel free to substitute blueberries with raspberries or chopped strawberries if desired.
