A quick and easy beef stroganoff recipe that’s creamy, savory, and comforting.


Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 8 oz mushrooms, sliced
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tablespoons flour
  • Salt and pepper, to taste
  • Noodles or rice, for serving


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add sliced beef and cook until browned (4-5 minutes). Remove beef and set aside.
  2. In the same skillet, add chopped onion and minced garlic. Cook until onion is translucent (about 3 minutes).
  3. Add sliced mushrooms and cook until softened (about 4 minutes).
  4. Sprinkle flour over the mushroom mixture and stir to combine. Slowly add beef broth, whisking to avoid lumps.
  5. Allow sauce to thicken, then reduce heat and stir in sour cream.
  6. Return beef to the skillet and mix to coat.
  7. Season with salt and pepper to taste.
  8. Serve over cooked noodles or rice.

Notes

For a healthier option, substitute sour cream with Greek yogurt. Adjust the cooking time for chicken or tofu if using instead of beef.
