A quick and easy beef stroganoff recipe that’s creamy, savory, and comforting.
Ingredients
- 1 lb beef sirloin, thinly sliced
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 8 oz mushrooms, sliced
- 1 cup beef broth
- 1 cup sour cream
- 2 tablespoons flour
- Salt and pepper, to taste
- Noodles or rice, for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add sliced beef and cook until browned (4-5 minutes). Remove beef and set aside.
- In the same skillet, add chopped onion and minced garlic. Cook until onion is translucent (about 3 minutes).
- Add sliced mushrooms and cook until softened (about 4 minutes).
- Sprinkle flour over the mushroom mixture and stir to combine. Slowly add beef broth, whisking to avoid lumps.
- Allow sauce to thicken, then reduce heat and stir in sour cream.
- Return beef to the skillet and mix to coat.
- Season with salt and pepper to taste.
- Serve over cooked noodles or rice.
Notes
For a healthier option, substitute sour cream with Greek yogurt. Adjust the cooking time for chicken or tofu if using instead of beef.
