Description

A simple and quick version of beef stroganoff that combines tender beef and creamy sauce for a comforting meal.


Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon Dijon mustard
  • 1 cup sour cream
  • Salt and pepper, to taste
  • Fresh parsley, for garnish
  • Egg noodles or rice, for serving


Instructions

  1. Heat olive oil in a large skillet over medium-high heat until shimmering.
  2. Add the sliced beef and cook until browned, about 2-3 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add onions and garlic, sautéing until softened.
  4. Add the sliced mushrooms and cook until tender and slightly browned.
  5. Pour in the beef broth and stir in the Dijon mustard. Bring to a simmer and scrape up any brown bits from the pan.
  6. Reduce heat and return the beef to the skillet. Stir in sour cream and season with salt and pepper.
  7. Cook for an additional few minutes until heated through, adjusting seasoning if needed.
  8. Serve over egg noodles or rice, garnished with fresh parsley.

Notes

Keep meat slices thin for tenderness and avoid boiling after adding sour cream to prevent splitting.
