Description

A quick and easy Beef Stroganoff that’s rich, creamy, and perfect for impressing guests or enjoying a cozy night in.


Ingredients

  • 1 pound beef sirloin, thinly sliced
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon Dijon mustard
  • 1 cup sour cream
  • Salt and pepper to taste
  • Fresh parsley, chopped
  • Egg noodles


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the chopped onion and garlic and sauté until they start to look translucent.
  3. Increase the heat and toss in the sliced beef. Let it brown.
  4. Stir in the mushrooms and let them cook until they soften.
  5. Pour in the beef broth and Dijon mustard. Let it simmer for about 5 minutes.
  6. Stir in the sour cream, season with salt and pepper, and heat through without boiling.
  7. Serve over cooked egg noodles and garnish with fresh parsley.
