Description

A creamy, comforting beef stroganoff that’s quick and easy to make, ideal for a delightful dinner.


Ingredients

  • 1 lb beef sirloin or tenderloin, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 medium onion, thinly sliced
  • 2 cups cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1/4 cup brandy or cognac
  • 3/4 cup beef stock
  • 1/2 cup sour cream
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons fresh parsley or chives, chopped


Instructions

  1. Heat olive oil in a large skillet over high heat. Add the sliced beef and sear until browned. Remove from skillet and set aside.
  2. Reduce heat to medium and add the butter. Once melted, add the onions and cook until soft.
  3. Add the mushrooms and cook until golden brown. Then add the minced garlic and cook for one more minute.
  4. Deglaze the skillet with brandy, scraping up brown bits. Stir in the Dijon mustard and beef stock.
  5. Let the sauce simmer until it reduces slightly, then stir in the sour cream until smooth.
  6. Return the beef to the skillet and simmer for 2 to 3 minutes. Season with salt and pepper.
  7. Garnish with fresh herbs and serve over noodles, rice, or mashed potatoes.

Notes

Avoid skipping the searing step for the best flavor. Let the sauce simmer to enhance its richness.
