A creamy, comforting beef stroganoff that’s quick and easy to make, ideal for a delightful dinner.
Ingredients
- 1 lb beef sirloin or tenderloin, thinly sliced
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 medium onion, thinly sliced
- 2 cups cremini mushrooms, sliced
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1/4 cup brandy or cognac
- 3/4 cup beef stock
- 1/2 cup sour cream
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons fresh parsley or chives, chopped
Instructions
- Heat olive oil in a large skillet over high heat. Add the sliced beef and sear until browned. Remove from skillet and set aside.
- Reduce heat to medium and add the butter. Once melted, add the onions and cook until soft.
- Add the mushrooms and cook until golden brown. Then add the minced garlic and cook for one more minute.
- Deglaze the skillet with brandy, scraping up brown bits. Stir in the Dijon mustard and beef stock.
- Let the sauce simmer until it reduces slightly, then stir in the sour cream until smooth.
- Return the beef to the skillet and simmer for 2 to 3 minutes. Season with salt and pepper.
- Garnish with fresh herbs and serve over noodles, rice, or mashed potatoes.
Notes
Avoid skipping the searing step for the best flavor. Let the sauce simmer to enhance its richness.
