Description
A warm and cozy German potato soup that is easy to make and perfect for cold evenings.
Ingredients
- 4 large potatoes, peeled and diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 4 cups vegetable broth
- 1 cup dairy-free cream
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Heat some olive oil in a large pot over medium heat. Sauté the onion, carrots, and celery until softened, about 5-7 minutes.
- Add the diced potatoes and vegetable broth, bring to a boil, then reduce heat and let it simmer until the potatoes are tender, about 15-20 minutes.
- Partially purée the soup with an immersion blender, leaving some chunks for heartiness.
- Stir in the dairy-free cream, thyme, rosemary, salt, and pepper. Heat through.
- Ladle into bowls and garnish with fresh herbs if desired.
Notes
This soup freezes well, so make a big batch and save some for later!
