Description

A comforting one-pot meal featuring tender chicken and baby potatoes smothered in garlic and Parmesan cheese, cooked perfectly in a crockpot.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)


Instructions

  1. Prep the ingredients by gathering all of them.
  2. Wash and halve the baby potatoes, then mince the garlic.
  3. Rub chicken breasts with olive oil and season with Italian seasoning, salt, black pepper, and red pepper flakes.
  4. Layer the halved potatoes in the bottom of the crockpot, then place the seasoned chicken on top.
  5. Pour chicken broth over the chicken and potatoes.
  6. Evenly sprinkle minced garlic and grated Parmesan cheese over the dish.
  7. Cover the crockpot and cook on low for 6–7 hours or high for 3–4 hours.
  8. Check for doneness with a meat thermometer; chicken should be at 165°F (75°C) and potatoes fork-tender.
  9. Serve warm, garnished with fresh parsley if desired.

Notes

For added creaminess, consider adding a splash of cream or cream cheese during the last cooking hour. Use fresh ingredients for enhanced flavor.
