Ingredients
- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 1 cup chicken broth
- 1/2 cup grated parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Prep the ingredients by gathering all of them.
- Wash and halve the baby potatoes, then mince the garlic.
- Rub chicken breasts with olive oil and season with Italian seasoning, salt, black pepper, and red pepper flakes.
- Layer the halved potatoes in the bottom of the crockpot, then place the seasoned chicken on top.
- Pour chicken broth over the chicken and potatoes.
- Evenly sprinkle minced garlic and grated Parmesan cheese over the dish.
- Cover the crockpot and cook on low for 6–7 hours or high for 3–4 hours.
- Check for doneness with a meat thermometer; chicken should be at 165°F (75°C) and potatoes fork-tender.
- Serve warm, garnished with fresh parsley if desired.

For added creaminess, consider adding a splash of cream or cream cheese during the last cooking hour. Use fresh ingredients for enhanced flavor.
