Description

A comforting and easy chicken meatloaf that’s packed with garlic and Parmesan flavor, perfect for weeknights.


Ingredients

  • 1 lb ground chicken
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (plain or Italian)
  • 2 large eggs
  • 1 medium onion, diced
  • 2 tbsp soy sauce (low sodium recommended)
  • 1 tsp salt
  • 1 tsp black pepper


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. Sauté diced onions in a skillet over medium heat until soft, about 5 minutes. Let them cool a bit before adding to the meat mix.
  3. In a large bowl, mix together ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until combined.
  4. Shape the mixture into a loaf form in the greased baking dish.
  5. Sprinkle remaining Parmesan cheese on top.
  6. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C). Let rest for 10 minutes before slicing.

Notes

Let the meatloaf rest for 10 minutes before slicing to keep it juicy. You can swap breadcrumbs for panko or crushed crackers if desired.
