A quick and easy dish that combines garlic, mushrooms, and cauliflower for a flavorful and healthy meal perfect for busy weeknights.
Ingredients
- 1 medium head cauliflower, cut into small florets
- 10 oz (280 g) cremini or white mushrooms, sliced
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme or 1 tablespoon fresh thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the sliced mushrooms and cook for 3-4 minutes until they start to soften and release their juices.
- Stir in the cauliflower florets, garlic, thyme, salt, and black pepper. Cook, stirring occasionally, for 12-15 minutes until the cauliflower is tender and lightly golden.
- Taste and adjust seasoning as needed. Sprinkle with chopped parsley.
- Serve warm straight from the skillet as a main dish or hearty side.
Notes
Make sure not to overcrowd the skillet for even cooking. You can add other vegetables like bell peppers or spinach for extra nutrition.
