Description

A delicious dish featuring tender chicken thighs in a rich, creamy sauce with earthy mushrooms, perfect for family dinners or special gatherings.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 8 oz fresh cremini or button mushrooms, diced
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 2 tablespoons fresh parsley or thyme, chopped (plus extra for garnish)
  • Additional salt and pepper, to taste


Instructions

  1. Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
  2. Heat butter and olive oil in a large skillet over medium-high heat. Sear chicken thighs skin-side down for 5-7 minutes until crispy. Flip and cook for another 2-3 minutes, then remove chicken and set aside.
  3. In the same skillet, add diced mushrooms and minced garlic. Sauté for 4-5 minutes until mushrooms release moisture and garlic is fragrant.
  4. Pour in chicken broth, scrape up any browned bits from the pan. Let it reduce slightly, then stir in heavy cream and allow to simmer until thickened.
  5. Nestle chicken thighs back into the sauce. Reduce heat to low, cover, and cook for 10-12 minutes until chicken is cooked through and tender.
  6. Garnish with chopped parsley or thyme before serving.

Notes

To keep the sauce creamy while reheating leftovers, add a splash of chicken broth or cream.
