Description

A simple and comforting garlic butter chicken recipe made in a crockpot that’s perfect for busy days.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs baby red potatoes, quartered
  • 1 lb whole carrots, peeled and cut into chunks
  • 6 cloves garlic, minced
  • 1/2 cup unsalted butter, melted
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped parsley (optional, for garnish)
  • 1/2 cup chicken broth


Instructions

  1. Toss the chicken, potatoes, and carrots into the slow cooker.
  2. In a bowl, combine melted butter, garlic, Italian seasoning, salt, pepper, and chicken broth. Whisk until combined.
  3. Pour the garlic butter mixture over the chicken and veggies, and gently stir.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  5. Garnish with fresh parsley if desired, plate, and enjoy!
