Ingredients

  • 1 lb (450 g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 300 g (10 oz) pasta (penne, fettuccine, or your choice)
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 1/2 cups (360 ml) heavy cream
  • 1/2 cup (50 g) grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 2 tablespoons chopped fresh parsley (plus extra for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken and cook for 5-7 minutes until golden brown and cooked through.
  3. Stir in butter and minced garlic, cooking for an additional 1-2 minutes.
  4. Remove chicken from skillet and set aside.
  5. Pour in heavy cream, stirring to combine, and bring to a gentle simmer.
  6. Stir in Parmesan cheese and Italian seasoning, cooking for 2-3 minutes until sauce thickens.
  7. Cook pasta according to package instructions, drain and mix into the creamy sauce, adding cooked chicken.
  8. Season with salt and black pepper to taste.
  9. Top with chopped fresh parsley before serving.

Notes

For a twist, substitute chicken with shrimp or tofu. Try using half-and-half instead of heavy cream if preferred.
