A delicious and easy-to-make casserole that combines chicken, caramelized onions, cheesy goodness, and rice.
Ingredients
- Chicken breasts
- Onions
- Rice (white, brown, or wild)
- Cream
- Gruyère cheese or Swiss cheese
- Broth (chicken or vegetable)
- Garlic
- Butter
- Salt
- Pepper
- Optional: Fresh herbs
Instructions
- Preheat the oven to 375°F (190°C).
- Melt butter in a skillet and sauté the onions until caramelized.
- Add minced garlic and cook for another minute.
- In a large bowl, combine cooked rice, sautéed onions, diced chicken, and broth. Season with salt and pepper.
- Transfer the mixture to a baking dish, top with cheese, and cover with foil.
- Bake for 25 minutes, then remove foil and bake for another 10-15 minutes until cheese is melted and bubbly.
- Allow to cool slightly before serving.
Notes
Covering with foil is important to keep the cheese from drying out. Let cool to avoid burns from hot cheese.
