Description

A delicious and easy-to-make casserole that combines chicken, caramelized onions, cheesy goodness, and rice.


Ingredients

  • Chicken breasts
  • Onions
  • Rice (white, brown, or wild)
  • Cream
  • Gruyère cheese or Swiss cheese
  • Broth (chicken or vegetable)
  • Garlic
  • Butter
  • Salt
  • Pepper
  • Optional: Fresh herbs


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Melt butter in a skillet and sauté the onions until caramelized.
  3. Add minced garlic and cook for another minute.
  4. In a large bowl, combine cooked rice, sautéed onions, diced chicken, and broth. Season with salt and pepper.
  5. Transfer the mixture to a baking dish, top with cheese, and cover with foil.
  6. Bake for 25 minutes, then remove foil and bake for another 10-15 minutes until cheese is melted and bubbly.
  7. Allow to cool slightly before serving.

Notes

Covering with foil is important to keep the cheese from drying out. Let cool to avoid burns from hot cheese.
