Ingredients
- 2 cups cooked rice
- 2 cups cooked and shredded chicken
- 2 large onions, sliced
- 3 tablespoons butter
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup Gruyère or Swiss cheese, shredded
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Melt butter in a large skillet over medium heat. Add sliced onions and sauté until caramelized, about 15-20 minutes.
- In a large bowl, combine cooked rice, shredded chicken, caramelized onions, chicken broth, and heavy cream. Season with salt and pepper.
- Pour the mixture into a greased baking dish and sprinkle cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is golden and bubbly.
- Let cool for a few minutes before serving. Garnish with fresh parsley and enjoy.
Notes
For a twist, try using brown rice, turkey, or even mushrooms as substitutes. This dish is freezer-friendly and versatile.
