Description

A comforting dish combining the flavors of French onion soup with chicken and rice, topped with melted cheese.

Ingredients

  • 2 cups cooked rice
  • 2 cups cooked and shredded chicken
  • 2 large onions, sliced
  • 3 tablespoons butter
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup Gruyère or Swiss cheese, shredded
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt butter in a large skillet over medium heat. Add sliced onions and sauté until caramelized, about 15-20 minutes.
  3. In a large bowl, combine cooked rice, shredded chicken, caramelized onions, chicken broth, and heavy cream. Season with salt and pepper.
  4. Pour the mixture into a greased baking dish and sprinkle cheese on top.
  5. Bake in the preheated oven for 25-30 minutes, or until the cheese is golden and bubbly.
  6. Let cool for a few minutes before serving. Garnish with fresh parsley and enjoy.

Notes

For a twist, try using brown rice, turkey, or even mushrooms as substitutes. This dish is freezer-friendly and versatile.
