Description

Ingredients

  • 1 cup rolled oats
  • 1 cup milk
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup blueberries


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine rolled oats and milk; let sit for 10 minutes.
  3. In another bowl, mix whole wheat flour, brown sugar, baking powder, and salt.
  4. Add the egg, applesauce, and vanilla to the oats mixture; mix well.
  5. Combine the wet ingredients with the dry ingredients and stir until just combined, gently folding in the blueberries.
