Ingredients
- 1 cup rolled oats
- 1 cup milk
- 1 cup whole wheat flour
- 1/2 cup brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 large egg
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 cup blueberries
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, combine rolled oats and milk; let sit for 10 minutes.
- In another bowl, mix whole wheat flour, brown sugar, baking powder, and salt.
- Add the egg, applesauce, and vanilla to the oats mixture; mix well.
- Combine the wet ingredients with the dry ingredients and stir until just combined, gently folding in the blueberries.
- Fill the muffin cups with batter and bake for 15 to 20 minutes or until a toothpick comes out clean.
- Allow to cool slightly before serving.
